Our Lives In a Nutshell

It’s baaaack!  I’ve been on Tasty Tuesday break for a while and need to get back in the swing of things.  Here’s a very simple soup recipe since it’s a soupy time of the year.

Potato Soup

This recipe is a family one.  I can remember having potato soup way way long ago.  I think it came from my Grandma, but you’ll have to talk to my mom to verify that.  The amounts of the ingredients are really up to the soup maker, but here’s a rough idea:

Ingredients

  • potatoes-as many as you want, depending on how much soup you want to make, or how thick with potatoes you want it-cubed.
  • milk
  • butter-1 stick-ish, depending on how much soup you make
  • flour
  • salt & pepper

Directions

  • Put potatoes in a large soup pot (or something like my brand shiny new Rachael Ray bright orange 5.25 quart Dutch oven!!! Thanks Mom!!) and cover with water.  Boil potatoes until tender when pierced with a fork.
  • Dump much of the water out, reserving a little in the pot.  Add enough milk to the pot to make as much soup as you want!  Or dump all the water out and make the entire broth with milk.  It’s up to you.  I leave only a little bit of water, and use mostly milk.
  • Melt the butter in small saucepan.  Whisk in the flour little by little until mixture is very thick.  Add mixture to the soup (this just thickens the soup a bit).
  • Heat soup until hot, seasoning with salt and pepper.
  • When the soup is in the bowl ready to eat, we like to smoosh the potatoes with a fork.
  • Serve with crackers (saltines or oyster crackers are the best).

I wonder if I show PapaBear this recipe he'd let me make this. He doesn't care for creamy soups, but if he saw the simple ingredients maybe he'd get on board. I love to order potato soup at restaurants. A local one here in MN puts real bacon, shredded cheddar, and green onions on top. Yum!!
