It’s that time again!
Southwestern Chicken
Ingredients:
- 2 cans (15 1/4 oz) corn, drained
- 1 can (15 oz) black beans, rinsed and drained
- 16 oz jar chunky salsa, divided
- 6 boneless, skinless chicken breast halves
- 1 cup low fat shredded cheddar cheese
Directions:
- Combine corn, beans, and 1/2 cup salsa in slow cooker.
- Top with chicken, top with remaining salsa.
- Cook on low 6-7 hours, or until done (mine only took about 4 1/2 or 5)
- Sprinkle with cheese, cover for 5 minutes for cheese to melt.
This goes really well with rice.
