Tasty Tuesday!

It’s that time again!

Southwestern Chicken

Ingredients:

  • 2 cans (15 1/4 oz) corn, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 16 oz jar chunky salsa, divided
  • 6 boneless, skinless chicken breast halves
  • 1 cup low fat shredded cheddar cheese

Directions:

  • Combine corn, beans, and 1/2 cup salsa in slow cooker.
  • Top with chicken, top with remaining salsa.
  • Cook on low 6-7 hours, or until done (mine only took about 4 1/2 or 5)
  • Sprinkle with cheese, cover for 5 minutes for cheese to melt.

This goes really well with rice.
